An Adventure in Pie Making

I've been wanting to make a pie for a few years now, but it seemed really overwhelming. I absolutely LOVE fruit pies- cherry is my fav but it seemed kinda dumb to just buy the cherry pie filling in the can. So, I decided to actually work with fresh fruit. Peaches were on sale this week at Price Chopper, so I decided to give it a go. I got a recipe for a summer peach pie. I wanted to make the crust from scratch, but decided that for the first go I would use a roll out crust and then next time I'll tackle the crust. So- here's my adventure!

G wanted to help for awhile- so he watched me peel and slice the peaches. I used 5 peaches for my pie.
M did not want to help... The freshly peeled and sliced peaches all mixed up with the sugar and cinnamon!
My bottom crust. If you ever make a pie with a roll out crust DON'T defrost in the microwave like it says to- it makes it all stick together!Into the crust!I used a valentine's cookie cutter to make it look cute.I got a little cinnamon and sugar happy....woops.YUM!Now for the part I screwed up (of course). I had 25 in my head because that's how long it takes to cook...and G was screaming because he was hungry....so I accidentally set the oven at 325 instead of 375. I realized it when it wasn't done at all after the 25 mins. I upped the temp and left it in for awhile. It's REALLY good, but the peaches could have been cooked for just a couple mins longer. Oh well....I can DEFINITELY still eat it. Hopefully B will have some so I don't have to eat the entire thing.

See what fun you can have when you have the whole week off. That pie looks and sounds really good. I especially like the heart crust.
